While traveling in southern Spain, braised oxtail (Rabo de Toro) quickly became my favorite dish. It was a culinary delight so heavenly that I could indulge in it repeatedly without ever growing tired! With one bite, the rich flavor spreads from the gelatinous texture of the oxtail, providing an unforgettable and smooth sensation.
◦ Rabo de Toro (Braised Oxtail)
Rabo de Toro is a signature dish in the Andalusian region, with each restaurant boasting its own unique recipe. Considering the local cost of living, it tends to be a pricier dish on the menu. However, I threw caution to the wind when it came to my daily budget. Whenever I saw this delicacy on a menu, I couldn't resist stepping into the restaurant.
◦ Gazpacho (Cold Soup)
Another interesting dish that often appears on menus is Gazpacho, a refreshing cold soup. Given Spain's location in the Mediterranean region, the southern part endures scorching temperatures during the summer, which coincides with the tomato harvest season. Savoring a bowl of tomato-based gazpacho before a meal is not only the best way to beat the heat but also an excellent appetite stimulant. It might take a while for someone from Asia, who is accustomed to hot soups, to adapt to this cold soup. But after a few experiences, it becomes easy to appreciate the sheer comfort that a bowl of this cool and refreshing soup can bring during the sweltering summer days.
