India ◦ New Delhi | Saffron Palate: A Cooking Class Full of Spices

I really love curry, so I decided to take a cooking class in India to learn more about the spices. I ended up at a renowned cooking school called Saffron Palate in New Delhi. Even before I stepped into the kitchen, the garden filled with aromatic spice plants already relaxed me.

During this cooking class, I learned how to prepare a variety of dishes, including tangy chickpeas, spicy potatoes, butter chicken, vegetable biryani, and three types of flatbreads. At first, I felt a bit overwhelmed by the variety of bottles and jars on the table during the ingredient preparation phase. Luckily, with the teacher's clear explanations and thorough demonstrations, my confusion gradually became a series of flavorful and delicious dishes.

In just two hours, we cooked up four dishes, and the spicy potatoes and butter chicken were the absolute favorites! We couldn't resist indulging in several pieces of flatbread with these two dishes.

As we were leaving, Saffron Palate kindly gave each of us a recipe postcard and a Polaroid picture. Seeing myself in an apron was indeed a cherished keepsake.
