Many years ago, when my friends and I were in Tokyo, we had a feast enjoying a delicious pufferfish hot pot. At that time, we made a promise that someday in the future, we would come back together to relish another pufferfish feast.
We fulfilled this wish this year. Since it was our second time enjoying fugu, we wanted to try something different. In addition to the still-refreshing and chewy raw fugu slices and the incredibly satisfying porridge, the unique flavor of grilled tiger pufferfish shirako left a lasting impression on me. The exquisitely smooth surface and the rich, creamy interior combine perfectly to create the ultimate delicacy that can only emerge when the balance between protein and fat reaches perfection.
From January to March each year, it happens to be the pufferfish spawning season, and it's the best time to savor the shirako. To be able to enjoy the right ingredient in the right season is truly a rare treat.
